Canning Spaghetti Sauce

Canning Spaghetti Sauce:

If you have extra tomatoes, either from your garden or tomatoes you were able to get on sale, it might be fun to try canning them. It is pretty easy, and then you have reserve on those nights where things are hectic.

Our Spaghetti Sauce

Ingredients:

  • 1/2 bushel of ripe organic tomatoes

  • 3 large onions

  • 3-6 cloves of garlic (I like more)

  • 4 small hot peppers or you can use 1 tsp. of red pepper

  • 1/2 cup salt

  • 2 Tablespoons oregano

  • 2 Tablespoons Italian seasoning

  • 2 Tablespoon basil or fresh basil

  • 2 Tablespoons parsley flakes

  • 6-7 canning glass canning jars

  • Optional: spinach, mushrooms or other items you generally like in Spaghetti sauce

  • Optional: If your sauce is too thin, you can thicken with zucchini or tomato paste

  • Optional: You can add Young Living basil, or clove essential oils for added antioxidants and great flavor (go to www.youngliving.com/amberic to purchase)

Wash and cut your ripe organic tomatoes into quarters. Puree tomatoes in a blender. We do not peel them first because we just put them into the blender. Pour all the ingredients above into a large stock pot or crock pot and simmer for at least 4 hours. Put the hot sauce into hot glass canning jars. If the sauce has cooled too much, you can heat it again, in the jars in a water bath broiler for 20 minutes. Put the sauce in the jars, and put the lids on, then turn them upside down to seal them.

We also turn our sauce into pizza sauce by adding fresh avocado to thicken. It turns a different color, but is super yummy and healthy
